Varieties: Chardonnay, Malagouzia, Roditis Alepou, Assyrtiko
Soil: They are grown at an altitude of 250 – 350 meters and on sloping, clay and sandy loam soils.
Harvest: August- September
Vinification: The grapes come from young vines, up to twelve (12) years old. This wine comes from the cosmopolitan Chardonnay, Malagouzia. Roditis and Assyrtiko. Pre-fermentation extraction for 24 hours at a low temperature (8-10 C) followed by controlled slow fermentation and remaining with the lees for approximately six months and then stabilization and bottling. The vinification of each variety is done separately and then a blend of all the varieties is made and left in a tank with the fine lees for another six months.
