Soil: They are grown at an altitude of 350 meters and on sloping, clay and sandy loam soils.
Harvest: 17-25 September
Vinification: Destemming, pre-fermentation extraction for 24 hours at a low temperature (8-10 C) then controlled slow fermentation with the native yeasts of the grape and 12 months in tank with the fine lees.
