Soil: They are grown at an altitude of 350 meters and on sloping, clay and sandy loam soils.
Harvest: 17-25 September
Vinification: Destemming, controlled slow fermentation for over a month (30+ days) with the native yeasts of the grape. Aging for 18 months with the lees in oak barrels and then bottling. Without the addition of sulphite from vinification to bottling without filtering.
